December 9th, 2015 – Our mouths are watering in anticipation of our next “Propagation Series” release this weekend. So while we all count down the hours until our doors open, we thought we’d help pass the time by introducing the latest additions to our sour beer project.

The Propagation Series is what we’re calling the first of our released beers. These beers were brewed to explore various components of what will ultimately become part of our house culture. This is a one-and-done series, not to appear again.

Propagation Series 004: Ale with Rye, Lactobacillus, and Brettanomyces. A second iteration of our Berliner Weisse “Prop 002”, in this version we swapped all of the wheat malt with rye malt.
Final Gravity – 1.005

Titratable Acidity – 6.2 g/L

Propagation Series 008: Ale with Spelt, Brettanomyces, and Hallertau Blanc hops. Fermented with a blend of Saccharomyces and Brettanomyces in stainless steel, aged for a short time then dry hopped with Hallertau Blanc

Titratable Acidity – 4.4 g/L

Propagation Series 032: Ale with Brettanomyces aged in Oak Barrels with Pluots. Saison fermented in stainless steel with 100% Brettanomyces, aged in oak barrels with Flavor King Pluots for 4 months.

Titratable Acidity – 7.9 g/L
